Duck meat is so lovely, rich and full of flavour. I found this Marks & Spencer recipe in one of their store newspapers and really liked the combination of fresh plums, plum sauce and hoisin sauce over a succulent duck breast. Serve this over freshly cooked noodles for an easy but delicious midweek dinner.

Plum and Hoisin Duck

Serves 2 | Prep 10 minutes | Cook 20 minutes | Quick and Easy

You’ll need:

  • 2 Duck Breasts with Plum sauce from M&S or alternatively:
    • 2 Duck Breasts;
    • 100ml plum sauce;
  • 2 tbsp hoisin sauce;
  • 2 tbsp soy sauce;
  • 1 tbsp sesame oil, plus extra for noodles;
  • 3 plums, quartered;
  • 150g egg noodles (2 nests);
  • Small handful fresh coriander, leaves picked.

Method:

For the plum sauce: Put the plum sauce (that comes with the M&S pack, or otherwise) into a bowl. Add the hoisin sauce, soy sauce and sesame oil and stir well.

For the duck: Heat a frying pan over a medium-high heat. Once hot, cook the duck skin-side down for 5-6 minutes. Turn and cook on the other side for 3-4 mins, or until the juices run clear. Leave to rest for 5 minutes, skin-side up.

The plum sauce: Meanwhile, drain the fat from the pan and return to the heat. Add the plums and sauce; cook for 5 mins. Cook the noodles according to pack instructions, drain and toss with a little sesame oil.

To serve: Slice the duck and serve alongside the noodle. Spoon over the sauce the and garnish with coriander.
