The famous Padrón peppers, often found on a table full of Spanish tapas, perfectly blistered and seasoned with sea salt flakes. An incredibly simple dish, perfect for a healthy snack or as part of a homemade tapas menu. Trust me, you will hardly need the recipe below, but if you have never made them before you might find it useful.
Fried Pimientos de Padrón

These small chilli peppers are sweeter than most chillies, and aren’t usually spicy (though you can can get the occasional hot one).
For a serving for 4, simply wash and drain 250g Padrón peppers. Pat dry before frying in 2 tbsp heated olive oil for 5 minutes until they have blistered on all sides. Serve straight away, generously sprinkled with sea salt flakes. Serve on their own as a snack, or as part of other tapas.
